- Pīlādžu Mežonis 2020 (Rowan Wildling), Mixed Fermentation Rowan Ale 2020 A unique beer made by giving fresh wort to some wild yeast from last year. After almost a year of slow fermentation, in August we poured the beer on fresh rowan berries in a ratio of 1/5. The resulting tastescape is both ascetic and deeply piercing. The astringent dryness characteristic of rowan berries here is overcome by a bitter juiciness, which slowly turns into a melanholic sweetness. All of this sensation is escorted by the gently fair scent of freshly prepared rowan sauna brush and perfectly enriched with various wild yeast esters.
