Blauwe Bes, Back in the day, most breweries of lambic used to be farmers. This comes with some advantages. One of them is that we grow several of our ingredients ourselves, and it tends to happen that you find yourself with some leftover produce. So what do you do, if you have several hundred kg of blueberries which you cannot sell anymore? The brewers in us immediately think: "Is it farfetched to mix it with our lambic?" An overwhelming "hell no" was the answer after fermenting for about four months.
Our Blueberry lambic has all what is good about lambic, which is quite a bit, and a fruity, earthy taste of the blueberries. We have to admit, it's a bit special, and an experiment. But if you like it, as we do, scout's honor, we will make more of it! We added about 125 gram of blueberries per liter of lambic of at least one year old. After a second fermentation in the bottle, the result is quite fascinating. We like it, do you? Please let us know.
