- Speling van het Lot IX.i: Aardbeiiteraties: Bio Aardbei - Raw & Uncut, Assemblage n° 63 • seizoen 17|18 # of bottles: 515 Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this strawberry lambic, we used organic strawberries from the Ferme Framboos and we macerated on a Château Pabus barrel. The maceration period was very short - one month - and was immediately bottled afterwards, followed by a longer bottle conditioning. The fruit intensity is 366 grams of strawberries per liter of bottled Bio Aardbei.
