- Kirsch Weisse, A traditional Berliner Weisse: mixed fermentation with Brettanomyces and Lactobacillus. The cherries were fermented directly with the beer brew. This leads to a deep red color and lush flavors: The scent is initially dominated by the lush, fruity-sweet aromas of ripe sweet cherries with a hint of marzipan, then clearly fresher notes of green, juicy apples. Very tangy to drink, the sour cherries set the tone and lie round on the palate. With the second sip, lemon kicks and leaves a tingly feeling on the tongue. The finale of the Kirsch Weisse is fruity, balanced, not too sweet and a little bit tart.
