- Gris Sur Senne (23/24 - Bottle), The Craft : This blend consists of lambic and pinot gris grapes from two consecutive harvest years, 2023 and 2024. The grapes underwent a sevenday maceration process each time, inspired by orange wines. The blend includes both young and old lambics. The Experience : Blending young and old grape lambics is unique. The pinot gris gave us a vinous gueuze in the first edition, which we wanted to build upon with this second edition. This Gris sur Senne brings orange wine and gueuze together in a curious play of flavors.
